客家炒米香:前言
1: 炒米香於光緒年間傳至今,而發源與於廣東陸豐。當時農村家境貧困,人口多時,每年春節,都自製炒米香,給來訪客人及家人當甜點食用,甚至閒聊時配擂茶。
2:炒米香和爆米香有何差異?
炒米香試用鍋子將鹽或沙子加熱後,將米自然炒爆而成。
爆米香是用壓力,迫使米爆開。
